ABSTRACT

This chapter focuses on the role of nutrition and dietetic practitioners in contributing to uptake of sustainable diets. There are three interrelated barriers that hinder systemic engagement with sustainability: Training is framed by paradigms ill-suited to understand and address challenges of this nature, behaviour change is hindered by the socioecological realities of people’s lives, and what is sustainable is highly contextual. Addressing such challenges begins with, but moves beyond, telling people what to eat, or not eat, and in this chapter, we share insights for more systemic solutions that support communities to know sustainable diets. This includes shifting food environments and systems, inviting community participation and ownership, and inclusive knowledge sharing. The insights are broadly relevant across disciplinary boundaries.
