ABSTRACT

This chapter provides a critical analysis of organisations and campaigns designed to educate, inspire, and facilitate more planet-friendly food services. We explore, through systems thinking, how researchers and change agents are experimenting with ways to increase the offering and selection of healthier foods in educational and academic settings. We examine organisation and campaign strategies, key messages, framing, and tools designed to inspire transitions to more sustainable, friendly diets. We shine light on the opportunities and controversies associated with increasing focus on planet-friendly foods. This analysis may inform institutional change strategies and accelerate implementation of planet-friendly food practices and policies that promote sustainable diets.
