ABSTRACT
Often within healthcare, including dietetics, representation is limited and there is prejudice to those who are outside the dominant group. The work in this chapter explores through the self-expression of the artist the intersection of LGBTQ+ identities and the field of dietetics. The chapter shows a 3D, mixed-medium art piece constructed from polymer clay, paint, wire, string, glue, and saran wrap and uses of symbols of fruit, vegetables, and butterflies to explore the topic.
