ABSTRACT

This chapter reviews the literature and the main findings obtained by historiography in recent decades with respect to the study of biological standards of living, anthropometry and the nutritional status of human beings from a historical point of view. It also indicates the need to conduct a more in-depth analysis of nutritional inequalities in all its aspects. This is the main objective of the book for the Spanish case with a multidimensional methodological approach: nutritional and anthropometric. In other sections, the reader is introduced to the Spanish historical context or is offered a review of the main findings of each of the book’s chapters. Finally, the conclusions sum up, in general terms, the main historiographical contributions of the book to the study of food and nutritional inequalities in Spain from the nineteenth century to the present day.
