ABSTRACT

This chapter provides an overview of the Alternative Food Network (AFN) concept and its application of gastronomic tourism. It aims to illustrate that the exchange of food products in gastronomic tourism is possible thanks to conventions shared by actors involved in the networks. The chapter highlights the main features of AFNs based on common gastronomic tourism products identified in the case study. It also aims to elaborate the conceptual framework and presents the data, context and the methodology of analysis. The chapter addresses some key theoretical and practical issues in the understanding of gastronomic tourism supply chain in the alternative food systems. It explores gastronomic tourism within the basic features of the AFN and draws theoretical and practical insights. The efforts to co-ordinate situations and outcomes in resolving interpretive differences in new or modified contexts of action give rise to conventions that unite facts through mutual expectations.
