ABSTRACT

Worldwide, cereals are the main source of energy and nutrition according to the food habits of consumers in different regions. Cereal grains undergo many processing and unit operations for better utilization, value addition, and manifestation of its inherent functionality. Pneumatic polishing is one of the best examples of technology advancement till now in rice processing sector, which reduces broken percentage of rice and consumes less energy compared with traditional polishing systems. Conventional milling techniques include either dry or wet grinding, which has certain limitations. The wet milling consists of a five-step process including soaking, addition of excess water, filtering, drying, and sieving, thus involving many machines and manpower. The novel technologies and products in the field of cereal processing have indeed improved the yield and quality of the final value-added products. Several technologies are still under research the food technologists and engineers are coming up with innovative concepts, adding to the pool of advanced technologies for cereal processing.
