ABSTRACT

This chapter analyzes the inter-linkages of climate change, sustainable and healthy food systems and diets, human nutrition and health using the food commons framework described by Vivero-Pol and considering the multiple dimensions of food. It begins by analyzing the impacts of climate change on the multiple dimensions of the food commons and it looks at how food demand and dietary choices affect climate change. Climate change is already disrupting the global food system and these disturbances are projected to increase in number and intensity. Adequate nutrition is a critical part of human health, life and development. Developing a global food system to deliver healthy diets for a growing population, while reducing environmental impacts and climate change, is one of greatest challenges of our world. The chapter concludes proposing the food commons as a framework for the transition to sustainable and healthy diets in order to address nutrition and health challenges and reduce climate risk to the global food system.
