ABSTRACT

This chapter focuses on the craft practices that have shaped both the social and physical spaces of one of London's most established artisanal cheesemongers – Neal's Yard Dairy – as well as the cheeses it sells. Drawing on oral history interviews and other ethnographic encounters we explore the ways in which the Dairy's ethos, sensual materiality and taskscape inform how the taste of the cheese is experienced. We argue that the process of cheesemaking continues within the space of the shop and forms part of an apprenticeship in taste in which cheesemongers and customers participate.
