ABSTRACT

This conclusion presents some closing thoughts on the key concepts discussed in the preceding chapters of this book. The book proposes that markets can also become spaces for alternative forms of consumption which can present a challenge to corporate capital and the trends of gentrification. The 'gourmetisation' trend is reframing markets away from their function as public spaces for the distribution of affordable produce into an elite consumption option. The authenticity and traditional nature of markets is exaggerated and staged as the markets lose their public function as centres of provision for affordable food and basic needs and need to be marketed to new audiences. Markets and market traders very often live under the threat of displacement. Displacement from central areas in cities of the most vulnerable citizens has now been identified as a central feature of urban development throughout many parts of the world.
