ABSTRACT

“Food security” means that people are able to get the nutrients adequate to maintaining a healthy life and normal activity at all times. It implies that a country or region not only has sufficient food supplies and stable market conditions, but also that all people have access to sufficient food (FAO 1996a). The rural economic reforms starting at the end of the 1970s enabled China to eliminate shortages in food supply. It can be anticipated that, under circumstances of continuing technological progress and economic globalization, China should be able to attain food adequacy for the next century through developing domestic agriculture and through international trade (Liang Ying 1996). This study assumes an adequate food supply at the macro level, and focuses on the food consumption and nutrition status of households and individuals
