ABSTRACT

This chapter provides an overview of current trends in the market for halal meat and other animal products in the UK and it presents the results of the interviews with the key informants from the competent authorities and the managers of the slaughterhouses in Wales practising halal slaughter. Finally, it discusses the current trends in the halal meat market in Wales. In 2002 Mintel published a report in which it estimated that in the UK ten abattoirs were licensed to carry out religious slaughter in order to supply halal meat, most of which was poultry and the slaughterhouse managers aimed to collect up-to-date information on personnel and practices and the number of animals killed for the halal market in order to obtain an understanding of the development of the halal meat sector in Wales. This is actually causing a lack of transparency in the halal meat market in the UK/Wales and other growing markets.
