ABSTRACT

In simple terms, we are nourished daily by food comprised of carbohydrates, proteins, and fats, just as we ourselves are essentially composed. So, there is inherent truth to the adage, “we are what we eat.” What is curious and paradoxical is today’s prevailing view of one of these basic macronutrients, fat, as vile and generally deleterious to our health. This stance is particularly paradoxical when we consider mental or behavioral health, since 60% of the dry weight of the brain is lipid or fat (Dietschy & Turley, 2001).
