ABSTRACT

This chapter presents reflections on the elements that articulate equity (or inequity) and healthy and sustainable food systems. The hegemonic model of organisation of all stages and dimensions of food systems generates economic, social and political inequities, while also having consequences for the quality of life and health of all. Structural changes in the way we produce, market, process and consume food depend on measures that promote equity, and at the same time, changes in these processes can also be promoters of equality. This chapter presents the example of Brazil, which has for a little more than a decade, developed public policies that have generated important transformations in poverty reduction, sustainable practices and access to food. However, it is also highlighted how structural determinants of structural inequities can resist change and can reorganise quickly to return to the original circumstances.
