ABSTRACT

Pectinase is the most widely used enzyme commercially. It is very important to explore this enzyme as its uses are many. Pectinase is an important enzyme in the field of food industries and is mainly used in fruit and vegetable extraction, oil extraction and fermentation of coffee, cocoa and tea. It is of both plant and microbial origin. In our present study, we have given emphasis on isolating pectinolytic fungi from rotten fruits and vegetables. The study mainly focused on characterizing the nature of the enzyme based on the clearance zone formed due to the activity of different fungi on pectin. For this, Czapek-Dox medium was used. Under our study, we found that the clearance zone formed by the medium containing fungal growth from tomato was of biggest diameter.
