ABSTRACT

Food quality, food safety, and food traceability are issues of major importance nowadays due to the increasing number of threats, such as the increase in prices and in scarcity of raw ingredients, which lead to fraud and adulteration, or the hard competition in the food market that can nd unscrupulous companies using cheaper illegal raw materials. It should never be forgotten that the quality of the food we eat is of great importance in the correct functioning of our body and, in fact, in the possibility of enjoying a healthy life.
