ABSTRACT

Among processing technologies (e.g., canning, freezing, etc.) that have been used on an industrial scale to preserve foods, dehydration, one of the oldest methods, offers a cost effective and very practical means of preservation. It is not known when the dehydration process began, but history shows that our ancestors learned how to dry foods using a trial-and-error approach. Commercial food dehydration eventually evolved within a scientific-based environment and made possible the establishment of a worldwide industry, capable of providing a convenient and nutritious food supply. It is widely used today for a large number of dry food products.
