ABSTRACT

The flavor industry has a large number of flavoring materials available to it for use in the creation of a flavoring. These materials consist of various plant and animal materials (and derivatives thereof), products of fermentation and enzymology, as well as synthetic chemicals. There has been a gradual change in materials used over time due to the discovery of new materials (e.g., exotic plants), developments in processing technology (e.g., distillation, extraction, and adsorption), biotechnology (enzymology and fermentation), process chemistry (process flavors), and organic synthesis (e.g., chiral syntheses). This chapter will present an overview of these materials as well as their means of manufacture.
