ABSTRACT

The antioxidant and antiproliferative activities of 10 common vegetables (broccoli, spinach, yellow onion, red pepper, carrot, cabbage, potato, lettuce, and celery) were recently studied by Chu and coworkers (2002). The phenolic content and antioxidant activity of cabbage fell in the middle, while antiproliferative activity, using HepG(2) human liver cells, was highest in spinach, followed by cabbage. Thus, cabbage had the second-highest bioactivity index (BI) suggested as an alternative biomarker for future dietary cancer-prevention studies.
