Nearly 100 years ago, the Russian Nobel prizewinner Elie Metchnikoff observed a high life expectancy in Bulgarian peasants who ate large amounts of fermented milk products. He believed that the reason for their longevity was their consumption of lactic acid bacteria (lactobaccilli and bifidobacteria) in fermented milk products. He subsequently published his landmark paper stressing the importance of intestinal lactobaccilli in maintaining human health (Metchnikoff, 1907).
