ABSTRACT
In principle the biomass of yeast can be used in different forms. The simplest way can be the utilization of total cells. Another possibility is the partial destruction of cell walls and removal of components adversely influencing the end use properties. The principal methods used for rupturing yeast cells are mechanical, disruption and enzymatic digestion of cell walls. Effective disintegration of yeast cell walls has been achieved using mechanical methods. This chapter describes different types of laboratory — or pilot plant scale equipment, from simple grinders, bead mills, ball mills, till special vibro-colloid mills and ballistic desintegrators. The lytic enzyme complex was bound to soluble carbohydrate polymers by the mild periodate technique which leaves no potentially toxic linkage agent in the product. The enzyme bound to Dextran-300 was active on whole yeast cells. The results of these investigations suggest the possibility of elaborating immobilized enzyme technology for enzymatic yeast cell disruption on a commercial scale.
