ABSTRACT

Yields of poultry vary considerably among lots even at the same stage of processing. Shrinkages during processing are influenced by the kinds and classes of poultry, the age, sex, size, and breeding. The increased use of poultry parts sold in separate packages of a given weight, the use of certain parts for ready-to-serve convenience items, and the problem of portion control when poultry is served in large quantities has created a need for more information for use in quality control methods. Advantages of the multiple sample test are that smaller differences can be detected, it gives additional information on the relationship of the samples and it requires fewer samples and less time than the other methods. Dilution tests can be used to determine the smallest amount of a substance which can be detected when diluted with a solvent. They have been used with chicken broth.
