ABSTRACT

Market milk comprises—apart from types described with a nearly natural taste and pH value—milk drinks and cream products. Market milk is essential for feeding children. The market milk packs must be sealed immediately after filling in an automatic way. Packaging is the most expensive operation—from a technical, material and economic point of view—for market milk and other dairy products. Milk drinks are the result of consumer demand for an increased variety in taste. Food additives are indispensable for milk drinks and other dairy products. Milk drinks, fruit yogurts or quarg preparations and ice cream preparations can be colored with these compounds, and the cheese surface can be labeled with them. Apart from cocoa-based milk drinks other drinks are prepared using fruit preparations, flavors and essences. Cream products are products that are enriched to a varying degree with milk fat; they are nonacidified, acidified, whipped and may or may not have additives.
