ABSTRACT

High-valued crops, tomatoes are among the leaders of the pack in terms of their ability to contribute to economic wealth, but Thomas Jefferson was referring to far more than dollars when he made this statement. Maintaining a prosperous farm in the modern world can be challenging and requires attending to both quality and yield, particularly for high-value crops such as tomatoes. Certification of processing tomatoes is based on a limited sample and allows for greater numbers of defects than is the case for fresh tomatoes. The Internet of Things (IOT) has a unique opportunity to solidify the links among all the sensed parameters and what matters most to the fresh tomato consumer—taste and flavor. The possibilities for sensors in agricultural IOT are certainly not endless because of tight budgets and other resource constraints, there is definitely room for carefully chosen sensors and well-designed IOT networks to support, supplement, and enhance the wonderful world of tomatoes.
