ABSTRACT

I n t ro d u c t i o n Diacylglycerol (DAG) oil is an edible oil composed primarily of 1,3-and 1,2-diacylglycerol (ratio of 7:3) with characteristics similar to plant-derived fats and oils such as rapeseed oil; however, is more hydrophilic and soluble than triacylglycerol (TAG) oil. The fatty acid composition of DAG oil comprises mainly the unsaturated fatty acids, such as oleic acid (20-65%), linoleic acid (15-65%), and linolenic acid (≤15%), with small amounts of saturated fatty acids [palmitic and/or stearic acid (≤10%)] (see Chapters 18 and 19). DAG oil is produced commercially through esterification of fatty acids derived from natural edible plant oils in the presence of a lipase preparation; it contains >80% DAG, <20% TAG, <5% monoacylglycerol (MAG), and small amount of food additives such as antioxidants and emulsifiers as shown in Chapter 19.
