Alfalfa: Also known in China as Mu xu or Muk suk, this plant has been cultivated for centuries as a fodder plant for animals. Alfalfa is a deep-rooted plant that is now being used as a vegetable, especially the young shoots. In the United States, the young shoots are used raw in salads, in stir-fries, and steamed as a vegetable. The leaves are an excellent source of proteins and vitamins. In the Third-World countries, leaves are used in making a concentrate to supplement poor diets. Available year-round.
