ABSTRACT

The chain of events in the “life” of a frozen food may

include the following processes: pretreatment (blanching

for vegetables, osmotic impregnation, and partial dehydra-

tion for fruits), freezing, storage and display in the frozen

state, tempering, cutting in the tempered state, and thaw-

ing. The words in italics represent the processes that are

always present; the other processes are optional.
