ABSTRACT
Biocatalyzed (or enzymatic) reactions are desirable in food
industry in a number of ways. Firstly, the reaction rate is
reasonably fast at moderate temperatures, which is advan-
tageous because food components are generally heat sen-
sitive. Secondly, certain reactions, which are necessary to
produce flavor, taste, or some unique physical properties,
can only be achieved through desired enzyme activities.
