ABSTRACT

Pressure is an important physical parameter that conditions

the relation of microorganisms with their environment.

Modifications of extracellular pressure may cause a cell

stress, the extent of which depends on the intensity of

pressure change (e.g., pressure level and holding time), the

type of microorganisms (e.g., strain and physiological state),

and the surrounding media (e.g., composition, pH, and tem-

perature). An overview of the impact of the above factors on

microbial resistance to pressure is presented in this entry.
