ABSTRACT
Solid-liquid extraction, pressing, or drying of food
matrixes is strongly dependent on diffusion and mass trans-
fer through the cells and tissue and is characterized by the
disintegration of the material. To achieve a high level of
disintegration of solid tissue, thermal, mechanical, chemi-
cal, or enzymatic methods are commonly used.
