ABSTRACT

Refrigerants are the working fluids that circulate around a

refrigeration system, absorbing heat from areas to be

cooled and transferring it to where the heat can be dissi-

pated. A variety of refrigerants are available for different

cooling/freezing applications. In the food industry, the

most commonly used refrigerants are ammonia and freons,

but in the recent years, the trend has been to move away

from freons and to look for more environment-friendly

compounds.
