ABSTRACT
Concentrated foods are obtained by removing water by
evaporation up to the desired level of solids in solution.
Primary objectives pursued are to reduce the weight and
volume of products, thereby lowering packaging, transpor-
tation, and storage costs; reducing energy consumption if
subsequently dried; and reducing water activity to enhance
storage stability.[1] A discussion of their thermal, rheolo-
gical, and electrical properties follows.
