ABSTRACT

Cooling tunnels are utilized in many industries to cool

product from unit operations, such as ovens, fryers, and

dryers, and enrobes to packaging temperatures. The com-

mon objective of cooling tunnels is to cool the product

without inducing detrimental changes to product quality.

The cooling rate may need to be controlled to ensure proper

hardening of coatings such as chocolate without inducing

bloom. Too cold of cooling air on baked goods may cause

rapid staling of the product. In baked goods, the humidity of

the cooling air will affect the surface properties and final

moisture content of the product.[1] Cooling tunnels can use

ambient temperature air or refrigerated air depending on the

cooling requirements and the ambient conditions available.
