ABSTRACT

This chapter reviews the application of different types of imaging and spectral techniques to detect mycotoxin contamination in a variety of agriculture products, such as cereals, different kinds of nuts, and other crops. It also reviews the application of different types of imaging techniques to detect aflatoxin (AF) contamination in a variety of agriculture products. Chili pepper may also be contaminated by AFs during harvesting, production and storage. In order to differentiate AF-contaminated chili peppers from uncontaminated ones, a compact machine vision system based on hyper spectral imaging system and machine learning is proposed. A multispectral imaging system was applied to detect AF-contaminated red chili peppers. The classic pattern-recognition problem usually includes two stages: feature extraction and classifier. With the development of deep learning technology, it may be a fashionable way to apply deep learning to the identification of mycotoxin.
