This chapter provides information on actual farming practices. Most environmental variables that influence potato production, such as elevation and latitude, are continuous rather than discrete. Production hazards like hail and frost cause low average yields in many highland areas. The Mantaro Valley, which is located in the central highlands about 200 kilometers from Lima, the nation’s capital, provides an example of the complex potato production systems that characterize the Andes. Located in the central coastal region, 150 kilometers south of Lima, the Canete Valley provides a counterpoint to the potato production systems of the Mantaro Valley. In Bogra Sadar, the potato production system differs in several important respects from that in Tongibari. Benguet Province, in northern Luzon, is typical of highland vegetable-producing areas in Southeast Asia. Potatoes are particularly important in the farming systems of southern Chile, which has a cold winter and a cool, rainy summer.
