ABSTRACT

Several motivations regarding the numerical solution of drying phenomena can be proposed including the following ones: analytical solution, practical problems, due to the complex nature, although analytical solutions provide the exact solution, and drying involves simultaneous heat and mass transfer. A better understanding of the analytical solution can lead towards accomplishing numerical solutions of real-life problems. This chapter presents different strategies of modelling drying phenomena and their solution approach. It uses the examples of food materials from this chapter and onwards. Formulation of the empirical model is simple enough that it does not need any prior expertise in the field of drying. Moreover, understanding of these types models is possible with little training. Generally, these models use experimental data to develop the relationship between the moisture content of the sample and drying time.
