ABSTRACT

Barley has an excellent nutritional profile and the health benefits of barley stimulate interest among food producers and consumers in using them for food purposes. The physical properties of cereal grains are required for designing food-processing appliances during harvesting, separating, cleaning, handling, and storing of grains and converting them into food, feed, and fodder. The functional properties of cereal grains play important roles in the physical and sensorial behaviour of foods.
