The specific heat of a substance denotes the variation of the temperature with the amount of heat stored within the substance. As stated before, specific heat depends on the nature of the process of heat addition in terms of either a constant pressure process or a constant volume process. However, since the pressure dependence of specific heat is very little for solids and liquids until extremely high pressures are encountered and since pressure changes in heat transfer problems of agricultural materials are usually small, as stated previously, the specific heat at constant pressure is considered.
