Echinococcus granulosus infection in people can cause cystic hydatid disease, particularly of the lungs and liver. In northwest Scotland a dog-sheep life cycle of the parasite has been identified and exposure of humans is recognized. Fasciola hepatica is a common parasite of cattle, sheep, and goats and may infect a variety of other wild and domestic animals as well. Watercress and other aquatic vegetables are vehicles of human infection. In China, where vegetables are nearly always eaten cooked, infection may occur through cross-contamination of kitchen utensils or consumption of unboiled water. Increased risk was associated with travel to Mexico or Asia, consumption of undercooked pork products, use of unsanitary cooking practices, and importing potentially contaminated meat products into the USA.
