ABSTRACT

Maize (Zea mays L.) is the most widely distributed crop of the world being grown in tropical, sub-tropical and temperate regions. In India, maize is the third most important cereal after rice and wheat that provides food, feed, fodder, and serves as a source of basic raw material for the number of industrial products, viz. starch, protein, oil, alcoholic beverages, food sweeteners, cosmetics, bio-fuel, etc. Maize is a grain domesticated by indigenous peoples in Mesoamerica in prehistoric times. The Aztecs and Mayans cultivated it in numerous varieties throughout central and southern Mexico, to cook or grind in a process called nixtamalization. Later, the crop spread through much of the Americas. Maize is a versatile crop grown over a range of agro climatic zones. In fact the suitability of maize to diverse environments is unmatched by any other crop.
