ABSTRACT

The study of nutrition requires the use of these many disciplines to understand how food affects the function of the living body. Understanding how the nutrients are used in the food consumed in this setting is the goal of the nutrition scientist. The study of nutrition as a discipline was not defined until the early part of the 20th century. Nutrition research has identified the essential nutrients. At intervals, the intake recommendations are revisited by a panel of nutrition experts convened by the Institute of Medicine of the National Academies of Science. Indeed, some may develop one or more nutrition-related diseases either through excessive intake or inadequate intake of one or more essential nutrients and/or destruction of essential nutrients during preparation. In addition, nutrition assessment measures such as the levels of nutrients in the blood and urine, body weight, body composition and other anthropometric measures, blood pressure, and heart action can be informative.
