ABSTRACT

The micellar fluid layer to epithelial cell surface is homogenous, yet the products of lipid digestion are presented to the cell surface and, by passive diffusion, these products are transported into the absorptive cell. Milk is also an excellent source of essential vitamins and minerals and these micronutrients play roles as described above in suppressing free radical formation and the inflammatory response. The simple lipids are the fatty acids, acylglycerols, and sterols. In addition to being a very important source of energy, lipids serve a variety of other functions. The nomenclature of fatty acids is frequently confusing because the same fatty acid can have more than one name: its common name and its systematic name. The systematic method of naming fatty acids is based on a modification of the name of the straight chain hydrocarbon with the same number of carbon atoms.
