ABSTRACT
This chapter covers the “behind the scenes” parts of winery, brewery, and distillery design. First, the principles of cleaning, particularly thermal sterilization, are reviewed. The design of Clean-in-Place systems is also discussed. Waste water treatment, including equipment selection and waste water analysis are discussed. Finally, refrigeration, heating, ventilation, and air conditioning (HVAC), and carbon dioxide venting are explained.
