ABSTRACT

This chapter discusses the factors that affects the recovery of phenolics from millets. Metabolites that either possesses any biological activity or directly affect the health of living organisms could be referred to as bioactive compounds/constituent. The number of synthetic antioxidant-rich products available in the market for consumers is large; however, they are not considered as safe as natural products. Oxidants may be produced in cellular systems by many enzymes that utilize molecular oxygen as a substrate. Documented reports on millets indicate that they are good source of health-beneficial antioxidant compounds. Millets have the potential to combat oxygen species (OS) due to the presence of antioxidant properties in them. Food industries prefer to use millets as an important substrate for preparing various food products from them. Specificity of nutrient components in millets ensure the consumer satisfaction level along with cost-effective nature.
