ABSTRACT

Cereal-based foods have been consumed as a staple food worldwide in various forms, i.e., bakery products, noodles and pasta, snack foods, breakfast cereals, and others. Cereal grains have served as an important part of the human diet because of their minerals, vitamins, proteins, and antioxidant nature. Baking process is one of the oldest and important methods for processing grains. Bakery products are widely used as ready-to-serve snack products worldwide. The popularity of biscuits, bread, pastries, cakes, muffins, etc. signal a new era in the food technology that makes the millet grains important at the industrial level. Cookies represent the largest category of snacks in the bakery industry and can serve as effective vehicles of nutrient supply to the consumer. The term “biscuit” is derived from the Latin word panis biscotis which means twice-cooked bread. Muffins are considered as high-calorie sweet baked products appreciated by consumers due to their reliable cost, tasty nature, and texture.
