ABSTRACT

Aquatic food quality assurance is a major issue presently facing the aquatic food industry around the World. Aquatic food safety is a prerequisite for protecting consumer health, which also serves the interests of producers and those involved in processing and marketing of aquatic food products. Every stage from initial handling to processing, storage, distribution and consumption must be included in an aquatic food quality assurance programmes. The true incidence of diseases transmitted by aquatic food is not known. There are many reasons for this kind of situation. In most of the countries, there is no obligation to report on food-borne diseases to public health authorities. India has a long coastal line of 8118 km and an economic zone of 2.02 million sq.km, which offer a huge resource for aquatic foods. The processors and exporters should ensure quality from the stage of raw material to final packaging.
