ABSTRACT

Fish processors or fish business operators (FBO) need to supply safe and quality aquatic food to the consumers. Mostly fish are placed in the market either directly by fishers or by FBOs. The export requirements for fish and fishery products to the European Union are thus more stringent with several procedures and requirements. The pre-export approvals by the competent authority of importing nations, catch certificate by the Marine Products Export Development Authority, and export certificate by Export Inspection Agency are the document requirements for inspection in borders. The FBOs are getting their products tested for various quality and safety parameters either in their in-house laboratory or accredited government or private laboratories. Fish and shellfish are good sources of protein, minerals, vitamins, omega-3 fatty acids, and essential amino acids. Fish is a rich source of calcium and phosphorus and also iron, zinc, selenium, iodine, magnesium, and potassium.
