ABSTRACT

The largest quantity of table eggs of poultry are produced by the chicken followed by duck and other birds in India. A small quantity of table eggs of indigenous local fowl is still produced and preferred by many Indians but largest number is counting from the commercial layer farms of different high laying strains of leghorn birds. Shape of egg is important for arrangement in trays for incubation of fertile eggs as well as transportation of fertile and table eggs. Size or weight of eggs is an important trait that determines the suitability for the incubation of fertile eggs and food value of table eggs. The table eggs are shorted in different grades on the basis of weight for marketing. The objectives of egg grading are different for the fertile eggs for incubation and table eggs for eating. Preservation of eggs is done for prolonging the self life, keeping quality and food value of the table eggs.
