ABSTRACT

Bromelain is a protease enzyme derived from the stems of pineapples that is composed of a mixture of different thiol endopeptidases and other components like phosphatase, glucosidase, peroxidase, cellulase, escharase, and several protease inhibitors. Bromelain has potential therapeutic value as a treatment for angina pectoris, bronchitis, sinusitis, surgical trauma, and osteoarthritis. It is available as an anti-inflammatory drug in France for musculoskeletal disorders and is also employed as food supplement. Since 3 months, the patient every day used a mouthwash with a powder diluted in water. Patch tests were positive at D2 and D3 to the powder diluted with water. The powder contained sodium bicarbonate and bromelain; patch tests with these ingredients were positive to bromelain 2.5% pet.
