ABSTRACT

For governments in Mexico and international institutions like FAO, the current state of the food system is articulated with agriculture and small and medium-scale farmer. Agriculture has played a very important role by increasing the family food system, monetary income, and health quality, in addition to benefitting the global economy. In this chapter, there is information related to the food systems that have occurred over time in some regions of Mexico. It is hoped to conserve a part of the local and regional knowledge that articulates agroecosystems with food production, which fulfills the demand for consumption. Without this local traditional knowledge, it will become more difficult to reach the goal of agroecosystem sustainability and a fair food system. The cornfield and its traditional food systems remain key components in the wellness of small and medium-scale farmers.
