ABSTRACT
This chapter briefly discusses special products from soybean and cottonseed, including the product characteristics and production processes. Edible products from soybean de-oiled flakes, namely, soy flour, soy nuggets (texturised), soy protein concentrate, soy protein isolate are introduced, along with de-gossypolised cottonseed meal and cottonseed meal pellets for animal feed.
